Instructions

    Season the thin chicken breasts with salt and pepper.

    Heat olive oil in a skillet. Sear the chicken for 4-5 minutes per side until golden. Remove from pan.

    In the same pan, melt the butter and add the lemon juice (and capers if using), scraping up the browned bits.

    Return chicken to the pan to coat in the lemon-butter sauce.
