In a large pot, dry-cook the onions until soft. Add butter, garlic, and ginger.

Add the cubed beef and brown on all sides.

Add a splash of water, cover, and let the beef simmer on low heat for 25 minutes until tender.

Stir in the chopped kale/collard greens. Cover and cook for another 15-20 minutes until the greens are very soft.
