Preheat oven to 400°F (200°C).

In a large bowl, mix ground veal, eggs, oat flour, half the minced garlic, salt, pepper, and herbs.

Form the mixture into golf-ball sized meatballs. Press a cube of mozzarella into the center of each, sealing the meat around it.

Place meatballs on a baking sheet lined with parchment paper and bake for 20 minutes.

In a separate pan, heat olive oil, sauté remaining garlic, and add crushed tomatoes to create a sauce. Simmer for 10 minutes.
