Instructions

    In a large pot, dry-cook the minced onions on medium-low heat until soft and translucent.

    Add the sunflower oil and minced garlic, sautéing for about 3 minutes.

    Stir in the tomato paste and berbere spice blend. Let the spices toast and release their aroma for 5 minutes.

    Add the ground lean beef. Break it apart thoroughly with a spoon and stir constantly so it mixes entirely with the spice base.

    Reduce the heat, cover, and let simmer for 25-30 minutes so the beef cooks down into a rich stew. Add a small amount of water if it becomes too dry.

    Season with salt and black pepper to taste. Serve warm alongside Injera.
