Instructions

    In a large pot, sauté the onions until soft. Add cumin and ginger powder.

    Stir in the lentils, sweet potatoes, and tomatoes. Add 4 cups of water or broth.

    Bring to a boil, then reduce heat and simmer for 20 minutes until the lentils and sweet potatoes are tender.

    Scoop out a ladle of the hot broth and mix it with the peanut butter until smooth, then pour it back into the pot.
