Heat oil in a large pot. Add onions, ginger, and garlic, sautéing until fragrant.

Add the cubed chicken and cook until browned.

Stir in the tomato paste and peanut butter. Slowly add 2 cups of warm water or broth, stirring until the peanut butter melts into a smooth sauce.
