In a large wok or skillet, heat the sunflower oil and stir-fry the chicken until cooked. Remove and set aside.

Add the riced sweet potatoes, carrots, peas, garlic, and ginger to the wok. Stir-fry for 10 minutes until tender.

Push the vegetables to the side of the wok. Pour in the beaten eggs and scramble them until cooked.

Return the chicken to the wok. Toss everything together with soy sauce substitute and a dash of sesame oil.
